Watermelon Salad with Basil

A refreshing and easy to prepare summertime side!

Ingredients

1/2 small watermelon, rind removed
8 oz. feta cheese, crumbled
1/2 cup heavy cream or buttermilk
1/2 cup crème fraîche
1 1/2 tablespoons fresh lemon juice
1/2 cup finely chopped fresh chives, plus 1/4 cup, reserved for topping
Salt and pepper, to taste
1/4 cup fresh basil leaves


Directions

Quarter watermelon, place each quarter on its side and halve quarter sideways to total 8 wedges. In a medium bowl, stir cheeses, lemon juice and chives. Season with salt and pepper. Place 2 wedges on separate plates. Drizzle with dressing and sprinkle with reserved chives and basil leaves. Serves 4.
