Roasted Delicata Squash with Rosemary

Rich and sweet like butternut, delicata squash is easy to prepare. The outside skin is so tender after roasting, you can eat it!

Ingredients

2 1 lb. delicata squash
1 tablespoon finely chopped rosemary needles
1 tablespoons olive oil
1 teaspoon Kosher salt
1/2 t fresh cracked black pepper


Directions

Preheat oven to 400F. Cut squash in half lengthwise and scoop out seeds. Cut each half into half moons. Toss squash with other ingredients in a bowl and place on a sheet pan so that the squash pieces are on one layer. Roast for 30-35 minutes or until soft and slightly golden. Serve as a side dish, warm.
Serves 4
