Padrón Peppers and Cheese on Lavash

Ingredients

1 to 2 tablespoons extra virgin olive oil
Course kosher or sea salt, to taste
1 pint Del Cabo Organic Padrón Peppers
2 lavash crackers or other flatbread, toasted
2-3 ounces soft goat cheese


Directions

Heat olive oil in cast-iron skillet over medium heat. Add pepper slices and cook until soft, about 3 to 4 minutes. Remove peppers from heat.Sprinkle with salt.Spread goat cheese on crackers. Scatter pepper slices on top of cheese. Cut into bite-sized squares. Drizzle with olive oil. Serves 4 to 6 as an appetizer.
