Avocado Veggie Sauté

A colorful veggie accompaniment to any meal.

Ingredients

1 ½ tablespoons extra virgin olive oil
2 teaspoons chopped garlic
½ large shallot, finely chopped
½ tablespoon fresh thyme leaves
3 zucchini, cut in half and then into ¼" half-moons
1 red bell pepper
1 tablespoon grated lemon peel
1 1/2 tablespoons fresh lemon juice
1-2 ripe Hass avocados, peeled, seeded and cut into cubes


Directions

In a large skillet, heat olive oil over medium-high heat. Add garlic, shallot and thyme, and sauté for 3 minutes. Stir in zucchini, bell pepper and lemon peel, stirring for 2 minutes. Lower heat,cover, and cook for 3 more minutes.

In a small bowl, combine lemon juice with avocado. Add to skillet and stir gently for 2 minutes to blend flavors. Remove from heat and place on serving dish and serve immediately. Serves 4 as a side dish.
