Crab Roll Ups with Pickled Ginger

Ingredients

1-3 pickled ginger slices (see Pickled Ginger recipe)
1 avocado, thinly sliced
1 cucumber, thinly sliced
1 cup fresh crab meat
Salt, to taste
3-4 flour tortillas


Directions

Lay the well-drained pickled ginger slices on a flour tortilla. Add slices of avocado, then thinly sliced cucumber sprinkled with a pinch of salt. Top with crab meat so that the tortilla can be rolled up tightly. Once rolled, cut the filled tortilla in rounds. Makes about 15-20 appetizer sized pieces.
