Insalata Tricolore

An Italian summer salad from our own Italian sales team member, Cristiana.

Ingredients

2 large cucumbers, Japanese or English, or 8 Persian cucumbers (peel if using slicing cucumbers)
2 large tomatoes
1 small red onion or sweet white onion
1/4 cup red wine vinegar
6 tablespoons olive oil
Salt and pepper


Directions

Half the cucumbers lengthwise and slice into 1/4-inch slices. Cut the tomatoes into wedges. Thinly slice the onion. Dress with vinegar, oil, and salt and pepper to taste. Serves 4.
