Roasted Tomatillo Salsa

Try it on enchiladas, as a marinade for pork loin or as a condiment for any dish that needs a little extra zip.

Ingredients

2 lbs. fresh tomatillos, unhusked and rinsed
2-4 fresh serrano or jalapeno chiles (more or less, to taste)
3 garlic cloves, unpeeled
1 large onion, sliced in thick rounds
1/2 cup fresh cilantro, chopped
lime, juiced
1/2 teaspoon sea salt (more or less, to taste)


Directions

Place tomatillos, chiles, garlic cloves, and onion on a baking sheet and place under broiler, turning once, for 5 minutes or until slightly charred. Turn and broil other side. Let cool. Chop the onion, remove tops and seeds of chilies and peel the garlic, and add to blender with tomatillos, cilantro, lime juice and salt. Makes about 3 cups.
