Sautéed Chicken with Grape Tomatoes and Fresh Basil

Ingredients

2 tablespoons olive oil
4 skinless boneless chicken breasts, halved
Salt and pepper, to taste
1 cup fresh organic grape tomatoes, halved (if large)
3-4 garlic cloves, minced
1-2 tablespoons balsamic vinegar
¼ cup dry white wine or broth
3 tablespoons fresh organic basil, leaves only, chopped


Directions

Heat olive oil in a heavy skillet over medium-high heat. Sprinkle the chicken breasts with salt and pepper and add them to the heated oil in the skillet. Sauté the chicken until cooked through, about 5 minutes on each side, depending on thickness. Remove chicken to platter. Add the tomatoes and the garlic to the skillet and sauté for 1 minute. Add balsamic vinegar and wine or broth, raise heat, stirring to release any browned bits. Season sauce to taste with salt and pepper and return cooked chicken to sauce to reheat and absorb some of the flavors. Let simmer for 3 minutes, then sprinkle with chopped basil and serve with grilled polenta or on bed of freshly cooked pasta. Serves 4.
