Simple, Fabulous Spaghetti Sauce with Fresh Herbs

Roasting the tomatoes really intensifies their flavor.

Ingredients

2 lbs. Del Cabo cherry tomatoes (about 6 cups)
6 garlic cloves, peeled and smashed
2 tablespoons olive oil
teaspoon salt
teaspoon pepper
3/4 ounce fresh organic basil, leaves only, chopped
3/4 ounce fresh organic parsley, leaves only, chopped
3/4 ounce fresh organic chives, chopped
1/4 cup parmesan cheese, grated
1 lb. pasta


Directions

Cook pasta according to directions.

In a bowl, toss together the cherry tomatoes, garlic cloves, olive oil, and the salt and pepper. Mix well and place on a rimmed baking sheet. Roast in a 400F oven for 20 minutes or until tomatoes have burst open.

Toss the ingredients from the roasting pan, including any tomato liquids, with the chopped fresh herbs, cup parmesan cheese and the cooked pasta. Serves 4.
