Roasted Green Beans with Dried Tomatoes, Goat Cheese, and Kalamata Olives

Roasting green beans develops their sweetness and deepens their flavor!

Ingredients

Step 1-To roast:
1 pound green beans, the stem ends trimmed
1 tablespoon olive oil
Salt and pepper

Step 2:
1 teaspoon fruity olive oil
1 tablespoon lemon juice
1/2 cup thinly sliced dried tomatoes
1/2 cup pitted kalamata olives, coarsely chopped
2 teaspoons fresh oregano, finely chopped
1/2 cup (about 2 ounces) crumbled goat cheese


Directions

Step 1:
Heat oven to 450F degrees. Line a baking sheet with aluminum foil and spread the beans on it. Drizzle the oil over them, sprinkle them with about 1/2 teaspoon of salt, and toss to coat. Roast on the middle rack for about 10 minutes, remove, stir the beans around a bit, and roast again for another 10 minutes or until they start to develop golden spots and shrivel a bit. Adjust the salt and pepper and serve at once or try step 2!

Step 2:
While the beans are roasting, combine all ingredients except the goat cheese in a medium bowl. Add the roasted beans and toss to combine. Adjust seasoning with salt and pepper. Transfer to a serving dish and crumble the goat cheese on top. Serves 4.
