Cherry Tomatoes Sautéed with Basil/Herbs
Printer Friendly Version »Super easy and versatile
Ingredients
4 cups of red or mixed cherry tomato varieties1 tablespoon of olive oil
Salt and pepper to taste
4 tablespoons or so of fresh basil and/or other fresh herbs
(Optional: Substitute for or include with the basil other fresh chopped herbs such as parsley, chives, dill, marjoram, or oregano. Rosemary is great, too, though should be chopped finely and added to the pan with the oil since it needs some cooking. And/or try adding finely chopped garlic to the oil, before adding the tomatoes.)
Directions
In a large, nonstick sauté pan, heat the oil over medium/high heat. Add the tomatoes and season with salt and pepper. Cook, stirring frequently, for about 3 to 4 minutes or until some of the skins shrivel and split and all tomatoes are heated through.Sprinkle with basil or other fresh, chopped herbs and serve hot. Serves 4.
